Now a story about the wing keel: The wing keel was designed in 1983 for the Australian America's cupper who promptly won the cup with it! The design was attributed to the Dutchman Piet van Ossanen although that is now denied.
The use of the wings is precisely that a shallower keel can be used because the keel as a whole becomes more effective. The wings counteract the flow at the bottom of the keel, making it more effective. (just like the wing-tips or wing-lets at the ends of airplane wings).
Under heel the lee wing also extends deeper and helps to limit leeway. A wing keel is in any case (at least originally) not intended to make it easier to fall dry, although that can of course be the case, but rather to sail better/faster within a certain measurement.

7/8 tower rig
I also recently switched from "classic" tower rig to a larger boat with 7/8 rig. It took some getting used to, but I am very happy with it now. The boat has much more sail for weight and boat size compared to my old tower rig and sails accordingly smoother, sportier, livelier and more fun.
